German Potato Soup
An easy soup to make when the weather turns grey & misty
When summer is over, and autumn comes it’s time to be able to enjoy some nice soothing comfort foods. This soup is just that classic comfort food that I reach for in the wintertime. A firm favourite of mine when the weather gets colder super easy and quick to make. I love to dunk crunchy bread into this salty soup.
This is another classic recipe I grew up eating, although in our house we call it german potato soup I do not claim that this is authentic Kartoffelsuppe, or even remotely close. It is just our families version or take on a potato soup with frankfurters.
Perfect to eat while sunggled up in your cosiest jumper and socks in front of a roaring fire
This soup is super easy and quick to make and depending on the size of your household can last for a few days of warming comfort. I add less water to begin with and then if it is too strong will add more water to taste. We don’t blend the potato to make it smooth we will just roughly mash the potatoes in the pan to thicken the soup, leaving some nice little pieces of potato left.
German Potato Soup
Ingredients
1 Large Onion diced
1 Pack or 14 Rashers of Smoked Streaky Bacon
1.25 kg Potatoes peeled & diced
2 Litres of Stock
1 Bay leaf
1/8 tsp Ground Mace
350g of Frankfurters
Handful of Parsley Chopped
Method
1. Dice your onion and fry with your streaky bacon. If needed add a small amount of oil. Cook until onion is soft and transparent.
2. Add your potatoes, stock, mace and bay leaf to the pan. Bring to a boil then reduce to a simmer. Cook for 15 minutes.
3. Once your potatoes are soft use a potato masher to slightly break up and mash some of the potatoes.
4. Add in your chopped frankfurters and cook for another 5 minutes or until they swell slightly.
5. Add your parsley and season to taste with salt and pepper. Serve and enjoy.
